Dad’s Favourite: Caramel Cheesecake with a Yorkshire Parkin Biscuit Base

Father’s Day is all about celebrating the dads, grandads, and father figures who deserve a proper treat - and what better way to spoil them than with a homemade dessert packed with Yorkshire charm?

This no-bake cheesecake is a heartfelt tribute to Dad’s sweet tooth, featuring a crumbly base made from our Lottie Shaw’s signature Yorkshire Parkin Biscuits and rich swirls of our indulgent Luxury Caramel Sauce throughout. The warm ginger and treacle in the Parkin Biscuits add a nostalgic, hearty flavour that’s perfect for sharing after a Sunday roast or alongside a strong brew. Easy to make and impossible to resist, it’s a seriously good way to say “thanks, Dad” with every bite.

Ingredients:

For the base:

  • 200g Lottie Shaw’s Yorkshire Parkin Biscuits
  • 75g unsalted butter, melted

For the filling:

  • 500g full-fat cream cheese (room temperature)
  • 100g icing sugar
  • 1 tsp vanilla extract
  • 300ml double cream
  • 150g caramel sauce (plus extra for topping)

For decoration (optional):

  • Extra caramel sauce, warmed
  • Crumbled Yorkshire Parkin Biscuit
  • A pinch of sea salt (for salted caramel fans!)

Method

  1. Make the base:
  • Crush the Yorkshire Parkin Biscuits in a food processor or by hand using a rolling pin, until they resemble fine crumbs.
  • Mix in the melted butter until well combined.
  • Press the mixture firmly into the base of cake tin (20cm/8in).
  • Chill in the fridge while you prepare the filling.
  1. Make the filling:
  • In a large bowl, beat the cream cheese, icing sugar, and vanilla until smooth.
  • In a separate bowl, whip the double cream to soft peaks.
  • Fold the whipped cream into the cream cheese mixture.
  • Gently swirl in the caramel sauce - don’t overmix if you want a marbled effect like we have gone for
  1. Assemble and chill:
  • Spoon the filling over the chilled base and smooth the top.
  • Cover and refrigerate for at least 6 hours or overnight until set.
  1. To serve:
  • Drizzle with extra caramel sauce and crumble over more Yorkshire Parkin Biscuits (you can never have too many in our opinion)
